Description

I love pesto of any kind. I like to eat it with crackers, pretzels, pasta, and many other things. Our favorite way to use this pesto is on a chicken quesadilla.

Ingredients

  • 1-½ cup Fresh Cilantro Leaves
  • 2 whole Garlic Cloves
  • ⅓ cups Olive Oil, Divided
  • 2 Tablespoons Pecans
  • 2 Tablespoons Pine Nuts
  • ¼ cups Shredded Parmesan Cheese

Preparation

Process cilantro, garlic and 2 tablespoons olive oil in a food processor until a rough paste forms. Add pecans, pine nuts and cheese and process until blended, stopping to scrape down the sides of the food processor. With the processor running, pour remaining oil through the food chute in a slow, steady stream. Process until smooth. Cover and chill for up to 5 days or freeze for up to 1 month if desired.
