Description

A crunchy, healthy, vegan, chocolate-flavored granola made with gluten-free oats, almonds, dried cherries and coconut.

Ingredients

  • 4 cups Rolled Oats (I Used Trader Joe's Gluten Free Oats)
  • 1 cup Unsweetened Shredded Coconut
  • 1 cup Slivered Almonds
  • ¼ cups Coconut Oil
  • ¼ cups Coconut Sugar
  • ½ cups Unsweetened Cocoa Powder
  • ¼ cups Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 cup Dried Cherries
  • ½ cups Chocolate Chips (optional)

Preparation

Preheat oven to 275 F. Line a rimmed baking sheet with parchment paper; set aside.

In a bowl, add rolled oats, shredded coconut and slivered almonds; set aside.

In a small saucepan set over low heat, add coconut oil, coconut sugar, cocoa powder and maple syrup. Whisk constantly until sugar is melted and the sauce starts to pull away from the sides of the pan, about 5 minutes. Remove pan from heat and whisk in vanilla extract. Quickly pour chocolate mixture over oats and mix well. Take your time mixing, you wanted everything covered in your chocolate sauce.

Pour granola onto prepared baking sheet and gently press the granola down. Bake in the oven for 38 minutes. Turn oven off and leave the oven door slightly opened for about 30 minutes more.

Once granola is cooled, remove pan from oven, mix in dried cherries and if desired add a handful of chocolate chips.
