Description

Chicken, bacon, peppers – a small little piece of heaven.

Ingredients

  • 2 packages Sliced Bacon
  • 4 pieces Chicken Breasts
  • 1 jar Sliced Jalapeno Peppers
  • 1 Tablespoon Lemon Pepper

Preparation

It is very simple. I use a package of chicken breasts, 2 packages of bacon, 1 jar of jalapeno peppers, and some lemon pepper. That is it. They are heaven.

You cut the chicken breasts up into small chunks and set them aside. I like to pour out some of the jalapeno juice and the slices into the same bowl so the chicken soaks up some of the juice.

Slice the bacon in half and use one piece of bacon per roll up.

Place one piece of chicken on the end of the bacon. Then add a pepper slice. Then another piece of chicken. Then – as the name implies – roll them up.

Place them on a cookie sheet. Sprinkle lemon pepper over them.

Bake in the oven at 350-375 for about 45 minutes, turning them half way through the cooking process.

*These were originally made by my mother on the grill. When grilling them, you need to secure them with two toothpicks, and she uses beer to pour on them to keep the flames down, I guess. I’m not a grill master and I just eat them when she cooks them. I find the ones baked taste just as good.

Sounds great! One of my favorite bar snacks served up by a little dive here in Austin is very similar – except they dunk them in chicken wing sauce before cooking them.
