Crispy bits of fried cheese…. simply… perfect.
Have the cheese grated and ready to go. I used Colby Jack, but you can use any cheese that you like. I would not recommend soft cheese (such as brie or cream cheese).
Place a non-stick fry pan over very low heat – next to lowest setting on my electric stove worked perfectly. Depending on the cheese you selected you may or may not have to use a small amount of cooking spray. With Colby I did not have to use any.
Sprinkle a small amount of the cheese in the pan – you don’t want to completely cover the pan, just a light sprinkling, as the cheese will spread as it cooks.
Allow the cheese to sizzle and cook until it turns brown. Not just golden, but really brown. If you under cook this, it will be chewy.
Transfer from the fry pan to paper towels to drain off any excess oils. Eat immediately!!
