Caramelized Onion and Blue Cheese Crostini
In a large saute pan, heat the olive oil on medium-low heat. Add the onions and sprinkle with a dash of salt. Cook, stirring often, for about 5 minutes or until they have softened and then add the thyme leaves. Cook the onions, stirring often, for another 20-25 minutes or until they have turned brown. Remove from heat.
Spoon the onions over the toasted bread and top with blue cheese crumbles.
