My ultimate favorite! Easy, delicious Bruschetta mingled with garlic sourdough toasts and warm, creamy goat cheese. Fantastic!
Steps:
Preheat broiler
Mix tomatoes, garlic, basil, lemon juice, olive oil in a medium bowl. Salt and pepper to taste.
Place bread on baking sheet, drizzle with olive oil and lightly toast under broiler, about 1-2 minutes.
While bread is warm, rub each slice with the raw garlic.
Spread about 1 tablespoon of goat cheese on each bread slice.
Top with tomato mixture.
Place on baking sheet and place under broiler another 1-2 minutes.

The boyfriend and I tried this tonight–delicious!! We practically licked the pan. I think we doubled the basil, but the leaves I had were on the small side. We will definitely make this again!
