Delicious and so easy to make!
Preheat oven to 400 degrees.
1. Clean mushrooms and remove the stems, leaving a little bowl for your stuffing.
2. Crush croutons and drain tomatoes but not too throughly—leave a bit of the juice. In a bowl, combine crushed croutons, drained tomatoes, basil, and cheese. Using a fork, mix until ingredients are combined. Let this sit for a few minutes so the croutons absorb any juices from the tomatoes.
3. Place mushrooms on a baking sheet. Fill each with approximately 1 tablespoon of filling.
4. Place in the 400-degree oven and bake for 15 minutes.
