Toasted crostini pieces topped with a mixture of tomatoes, fresh basil, green onions, chopped garlic and marinated in a balsamic dressing.
Slice bread crosswise into rounds. Drizzle or brush with olive oil and bake in a 400 degree oven for 10 minutes or until lightly browned and not soft on top anymore. In a medium bowl, mix vinegar, sugar, salt and pepper until blended. Slowly drizzle in olive oil while whisking. Chop tomatoes, green onions, basil and garlic. Dump everything into vinegar & oil mixture and gently stir until well combined. Spoon over toasted bread. Enjoy!

I made this for Leilani’s (see above) daughter’s birthday party. The only complaint was there wasn’t enough. Really simple to make and delicious to eat.

I made this tonight with fresh tomatoes and basil from my garden. I threw in some fresh chives, too because I had to use them. It was really tasty! I can definitely understand the addiction.
