Description

Simple and fresh. Serve immediately or store in the fridge until ready.

Ingredients

  • 6 whole Roma Tomatoes
  • ½ cups Sun-dried Tomatoes, Packed In Oil
  • 3 cloves Garlic
  • ¼ cups Extra Virgin Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • ¼ cups Fresh Basil
  • ¼ teaspoons Sea Salt
  • ¼ teaspoons Cracked Black Pepper
  • 1 whole French Baguette
  • 2 cups Shredded Mozzarella Cheese

Preparation

Preheat oven to broiler settting.

In a large mixing bowl, combine chopped Roma tomatoes, sun-dried tomatoes, minced garlic, olive oil, balsamic vinegar, basil, salt, and pepper. Set aside for 10 minutes.

Cut bread into thick slices. Arrange on a baking sheet and put in the oven for 2 minutes, until lightly browned.

When removed from the oven, put a handful of mozzarella cheese on the bread. Top tomato mixture evenly on bread slices. Broil until cheese is melted, about 5 minutes.

I can’t make these very often. I ate way too many! I used smoked mozzarella, but I’m sure these would be great with regular mozzarella too because the flavor of the tomato topping is so good.
