Description

Scrumptious, healthy and easy. This can be made 2-3 days in advance and kept in the freezer. Serve warm with choice of dip or sauce.

Ingredients

  • 2 cups Water
  • 2 cups Broccoli Florets (fresh Or Frozen)
  • 2 whole Green Chilies, Stem And Seeds Removed, Thinly Chopped
  • ½ cups Coriander (Cilantro), Chopped
  • 2 teaspoons Salt
  • 2 teaspoons Red Chili Powder (optional)
  • ¼ teaspoons Black Pepper Powder
  • 5 whole Boiled Large Potatoes, Cooled And Peeled
  • 2 Tablespoons Semolina - Optional
  • 2 Tablespoons Flour, All Purpose Or Whole Wheat
  • 2 Tablespoons Corn Flour/Starch (optional)
  • ¼ cups Oil - For Sauteing The Patty

Preparation

In a large microwave safe bowl, add water and broccoli and microwave it on high for 5 minutes. This is going to steam the broccoli and bring out the rich green color. Drain the water and let the broccoli cool for 10 minutes.

Now add the steamed broccoli, green chilies, coriander, salt, red chili powder and pepper into a large food processor and pulse everything for 2 minutes or until broccoli is mushy and everything is mixed together and smooth.

Add boiled potatoes, semolina, flour and corn flour into the food processor and mix everything together for a minute.

Make 20 round patties (tikkis), place them on a platter and refrigerate for 30 minutes. (This step helps binds the tikkis together.)

Heat a large non-stick pan over medium flame, brush with oil and place 5-6 tikkis at a time into the pan. Let them cook for 2 minutes then turn to the other side and cook until both sides are cooked and brown in color. Remove from pan to a plate. Repeat until all the patties are cooked.

Place the cooked patties on a serving plate and serve hot.
