Description

French cheese puffs flavored with white wine and blue cheese, filled with tangy Irish cheddar. I dare you not to inhale them right out of the oven.

Ingredients

  • ¼ cups Dry White Wine
  • ¼ cups Water
  • ¼ cups Unsalted Butter, Cubed
  • ¾ teaspoons Freshly Ground Back Pepper
  • ½ teaspoons Salt
  • ⅔ cups Flour
  • 3 whole Eggs, Room Temperature
  • ⅓ cups Blue Cheese, Crumbled
  • ⅓ cups Grated Irish Cheddar Cheese

Preparation

Preheat oven to 375°F. Line baking sheet with parchment. Combine first 5 ingredients (white wine, water, butter, pepper, salt) in a heavy medium saucepan. Bring to boil over medium heat, stirring until butter is melted. Stir in flour; reduce heat to medium-low. Stir vigorously until mixture forms large dough clumps, about 1 minute. Remove from heat; cool 5 minutes.

Meanwhile, whisk eggs in a medium bowl. Add beaten eggs a few tablespoons at a time, stirring until eggs are completely absorbed after each addition (dough will be seriously sticky). Mix in blue cheese. Using a heaping teaspoon of dough at a time, pinch a dime-sized amount of Irish cheddar into a ball. Wrap the dough around the cheese. Drop each gougere onto the prepared baking sheet about 1″ apart.

Bake gougères until puffed, golden brown, and dry, about 30 minutes. If you need to make them ahead of time, store in an airtight container in the freezer and reheat in the oven.

Most specialty cheese shoppes in your grocery store have Irish cheddar…it’s a little tangier then regular cheddar. I’ve made these with both, and regular cheddar works just fine!

I get it (surprisingly) at Costco. It’s called “Dubliner.” Any sharp or extra sharp cheddar would work well!

Where do you get Irish cheddar? I am assuming that you could use American cheddar as a substitute? We live in rural America and don’t know if I could find it.
