A little twist on an old favorite! Perfect for that next picnic or BBQ!
To hard boil your eggs fill a pot with water. Place eggs in the pot and turn your burner onto medium high. Once the water boils set your timer for 10 minutes. When 10 minutes is up pour the boiling water out and cover your eggs with cold water.
Once the eggs are cool to the touch remove shells and cut in half. Put yolks in a bowl and smoosh with a fork and set aside. Set white parts aside as well (keep them whole).
Dice your tomatoes. Pat with paper towels to remove any excess water/juice. Crumble the bacon.
Add tomatoes, bacon, mayo, mustard, salt and pepper to the smashed yolks. (You can add more mayo/mustard if the mixture is too dry.)
Cut or break your lettuce into small pieces. Place the lettuce into the holes of the egg whites. Add your yolk mixture on top of the lettuce. Sprinkle paprika over the eggs. Keep in the fridge until ready to serve!
