Light and delicious as a dip or on a salad!
Drain and rinse both the black beans and corn. Slice the cucumber lengthwise and use a spoon to remove seeds (if necessary). Chop the cucumber to the same size as the beans.
Remove seeds from jalapenos and dice very fine. Chop cilantro and garlic. Mix all vegetables together and add oil, lime juice, cumin and salt.
You can increase the oil or lime juice to get the consistency you prefer. You can also add a diced tomato that’s been de-seeded as well.
