I had an impromptu arrival of friends back from their honeymoon (jealous), and they arrived with wine and photos in hand, so of course wine at 5 PM means you have to make something to snack on. Nobody wants to be drunk by 7 PM… So after a few seconds of “I have no chips or dip” panic, I had a brainwave. And boy, was it ever a delicious brainwave.
This is so simple. Slice the tomatoes in half, and arrange in an ovenproof dish. Sprinkle with salt and pepper, and top each one with mozzarella.
Grill until the cheese is slightly melted under a broiler on a medium high heat. Then, remove from the grill and heat the oven to about 220°C.
Sandwich all the tomatoes back together (placing 2 halves together with a basil leaf in between each half).
Secure with a cocktail stick/toothpick, then pop in the oven for five minutes until tomatoes soften.
Serve with a glass of white wine, or some sparkling water, and enjoy!
