Everyone loves bacon. It is the meat version of chocolate truffles. So when I discovered a simple way to make BLTs even better, I had to tell EVERYBODY.
First off, cook your bacon in a skillet over medium heat until it’s really crispy. It is important that you retain the bacon fat! I like to grill mine and catch the bacon in a baking tray under the grill (I think Americans call this kind of grill a broiler).
While the bacon is cooking, slice the tomato, and spread the slices on a paper towel to absorb some of the water. Sprinkle the tomato slices with a pinch of sea salt and some freshly ground black pepper.
Wash your lettuce. That’s all you have to do with that.
Next, take your really nice white bread – I like crusty sourdough. This is the bit where it gets awesome. Take the bacon fat from the cooked bacon, and lightly dip the bread in it on one side of each slice. Next, take the garlic clove and slice in half. Rub the other side of the bread with the garlic clove. Toast the bread until crisp, but keep an eye on it in case it burns. I just use a regular toaster, but you MIGHT be safer using your grill. This way it gets a gorgeous smoky bacon flavor.
When the bread is toasted, slather on the mayonnaise, top with the crispy bacon. Add the tomato slices, salt and pepper to taste, and the lettuce. Then sandwich the two slices of bread together. Cut the sandwich in half, and enjoy.
