Wondering what to do with the beets that are coming into season? Maybe you’re like me and you don’t even like beets. This is the recipe to try—it converted me to a beet-eater!
Preheat oven to 350ºF.
Scrub and peel (if you like) the beets. Slice thinly; if you have a mandoline, that’s great, but if not, just use a regular knife like I did. Slicing thinly is key because this will reduce the cooking time and increase the crispiness factor.
Toss in olive oil and salt and bake for 40 minutes or until the beets begin to crisp around the edges. Let rest for 5 minutes after baking and the beets will become even crispier.
