Red bell pepper takes typical spinach artichoke dip up a notch!
Heat oven to 350ºF. Mix sour cream and parmesan cheese. Stir in artichokes, spinach and bell pepper. Spoon mixture into a 1-quart casserole dish. Sprinkle with shredded cheese. Cover and bake about 20 minutes or until cheese is melted. Serve warm with crackers.
