Dairy-free Baked Buffalo Wings.
1. Preheat oven to 450ºF. Place wings in a large pot and fill with water until the water covers the chicken by 1 inch. Bring to a boil. Reduce heat and let simmer for 5 minutes. Pat wings dry with a paper towel.
2. Line 2 baking sheets with parchment paper and arrange wings, in a single layer, skin side down. Bake 25 minutes or until golden brown. Turn and bake for an additional 5 minutes. (Note: Don’t overcrowd the baking sheet as this will cause the wings to not get crispy. I learned this the hard way. Also, the parchment paper is a must.)
3. While wings are baking, add hot sauce and butter to a small pot. Simmer on low until butter is melted and mixes with hot sauce. (To make a mild sauce, mix in more butter with the wing sauce.)
4. Put wings in a large bowl. Pour wing sauce over them and toss. Serve with the dressing of your choice, celery and carrots.
