These stuffed peppers are a bit labor-intensive but completely worth it. They have it all: crunch, cheese and spice. They would make the perfect starter to a New Year’s Eve party.
1. Preheat oven to 375ºF.
2. Cut peppers in half lengthwise. Scoop out all the seeds and white membranes. Avoid touching your face, especially your eyes, and wash your hands well immediately afterwards.
3. Stuff about 1 teaspoon of cheese in each pepper half. Repeat with remaining cheese and peppers.
4. Slice each bacon strip lengthwise into 3 thinner strips. Wrap each bacon strip around a pepper and place them in a heatproof dish.
5. Bake in the oven for 20 minutes or until bacon is crisp.
Tip: If you don’t have garlic cream cheese, you can make your own by blending 1/2 clove of minced garlic with 1/2 cup plain cream cheese.
