Two-ingredient, paleo and gluten-free appetizer or snack. It’s your choice whether to share or not!
Preheat oven to 400ºF.
With a sharp knife or scissors, cut chicken into about 2-inch pieces (if you use tenderloins, cut each into 3 pieces). Cut bacon pieces in half. Wrap bacon around each chicken piece. Rub a little grapeseed oil on a baking pan and spread out evenly on the pan (I didn’t use aluminum foil, but you can to make cleanup easier).
Bake for 40 minutes, turning with tongs every 10 minutes or so. When done, carefully remove so bacon grease doesn’t spill.
Eat as-is or serve with dipping sauce like Sriracha!
