Avocado toast is the quintessential healthy comfort food. I enjoy its perfect balance of fat, fiber and protein for my morning breakfast, and it’s a favorite healthy afternoon snack with my kids.
Cut avocado in half. Remove the pit and peel. Mash avocado in a bowl with the olive oil and salt.
Toast bread and spread mayonnaise on each slice of bread, followed by the avocado mixture. For an additional nutritional boost, add some sprouts on top.
