Served with crackers or nachos or filled into cherry tomatoes, this is one yummy dip to enjoy!
Cut avocado into chunks. Place all ingredients (except the tomatoes) in a blender and blend until smooth.
Serve as is, with crackers or nacho chips, or fill it into cherry tomatoes.
For the cherry tomato version: Cut off the top of each tomato. Scoop out, leaving only the outer firm shell. Cut a small slice from the bottom so the tomatoes stand upright (don’t cut open the bottom – just cut a sliver off so that it stands upright). Fill with avocado dip and garnish with fresh cilantro.
