This recipe is a frittata cooked in the oven, so it is not fried, therefore light and healthy. I learned this from my mom.
Eliminate the external leaves from your artichokes and cut the hearts into smallish pieces. Put them in a bowl with water and the juice of half a lemon.
In another bowl beat the eggs with a pinch of salt.
Soak the bread in a little bit of water. Once soft squeeze the bread and break it into small pieces into the eggs. Add the Parmesan cheese and parsley, then the artichokes.
Grease a pan with olive oil and pour in the mixture. Bake at 180 C for about 30-40 minutes.
