A delicious baked frittata recipe I learned from my mom in Italy. Easy, tasty and light!
Eliminate the external leaves from your artichokes and cut them into smallish pieces. Put them in a bowl with water and the juice of half a lemon.
In another bowl, beat the eggs with a pinch of salt.
Soak the bread in water. Once soft, squeeze it and break it into small pieces into the eggs. (2 loaves of Italian bread are about 200 grams.) Add the grated Parmesan cheese and chopped parsley, then add the artichokes and mix all the ingredients together.
With some olive oil, grease a pan and pour in the mixture. Bake at 180 C for about 30-40 minutes.
