A yummy dip that is sure to become a party favorite. Very simple to make, and can be made on the stove top or in the crock pot for convenience.
Brown ground beef in skillet; season with onion powder (or with diced onion if you prefer to go that route). Season with salt and pepper.
In a large pot over medium heat, combine refried beans and chili (no beans, remember!). Add slices of Velveeta cheese, a few at a time, until melted; stirring occasionally to avoid burning. Once all cheese has been melted, add the jar of medium salsa, stirring until combined. Add in the cooked ground beef, and stir well to ensure all ingredients are mixed well.
Simmer over low to medium heat, until heated through.
Serve warm, with your favorite style of tortilla chips; garnish with sour cream and/or chives if desired.
