These cookies are so good, I can hardly resist them long enough to let them cool off. So easy and quick, they’re the perfect party snack.
Beat the butter for about 3 minutes untill it’s creamy and mix the cheese in. Add the dry ingredients and knead it till it’s a supple dough. Shape it into a roll of about 5 cm thick and let it cool in the fridge for about 15 munites.
Preheat the oven to 175ºC (or 350ºF). Line a baking sheet with parchment paper.
Cut the dough roll into slices of about 50mm (around 2 inches) and put them on the paper. Bake the cookies for 10 to 12 minutes untill they’re golden brown. Let them cool off on a rack and keep them in a closed jar for 3 to 7 days.
