These easy-to-make almond date truffles are true little healthy energy-bombs made in heaven. Sprinkle them with cocoa, cinnamon, coconut or anything you like.
Soak pitted dates in hot water for a few minutes to soften. Squeeze out excess water.
In a food processor, pulse almonds, ground almonds, honey and cocoa powder until finely ground. Add dates and sea salt and pulse until a thick and sticky ball forms.
Remove the ball from the kitchen machine. Divide into portions and roll into 1-inch balls.
Put the little balls on a baking sheet and place in the refrigerator until they have set enough and are no longer sticky.
Roll balls in the toppings of your choice. I used coconut flakes, chocolate sprinkles, cinnamon and ground almonds.
