Tart, crisp green apples are a nice contrast to this creamy, caramel cheesecake-like toffee dip. This is a perfect snack to take along to all those parties.
1. Fill a large bowl halfway with cold water. Squeeze the juice of the lemon into the water. Throw in the spent lemon just for the fun of it.
2. Quarter and core the apples and cut each quarter into thirds or fourths according to your discretion. Drop the apple pieces into the bowl of cold lemon water as you cut them. This will keep them from browning.
3. In a standing mixer, with the paddle attachment, combine the cream cheese, sugar, and candy pieces. You’ll have to stop the mixer and scrape the bowl several times.
4. Scrape the dip into a bowl.
5. When you are ready to serve this dish, remove the apples from the lemon water and blot dry with a clean dish towel. Arrange the apple pieces on a platter with the bowl of dip.
