Crispy, roasted chickpeas fragrant with warm spices and fresh chives make an amazingly tasty and healthy snack.
Preheat oven to 400 F. Put the chickpeas into a bowl. Coat the chickpeas with the olive oil, garlic powder and whichever spice you prefer. Place on a sheet pan that you’ve lined with parchment paper and roast at 400 F for approximately 20 minutes. Toss in the fresh chives, adjust the seasoning as needed and serve.
If you choose to saute them on the stovetop, use a cast iron or aluminum pan on medium heat and stir frequently for approximately 15-20 minutes.
