This is a delicious recipe for potato skins based off of an appetizer we ordered at Daddy Jacks
Bake the whole potatoes for approximately 30 minutes so that they are cooked and you can scoop out the insides and have the skins left.
Once you have scooped them to your preference for potato skins, spoon some spinach dip in the shells. You can use your own recipe for spinach dip or buy a container of it from your grocers deli, whatever works!
Sprinkle cheese on top of every potato skin. Cook the skins until the cheese is melted and they are warmed through.
Top them with diced tomatoes and slices of avocado. Serve with sour cream and enjoy!
