I was cleaning out the cabinets recently and wanted something to zip up a sandwich. What did I come up with? Well, a glorified BLT and one heck of a versatile recipe! Also, this is a work in progress, so I’m still tweaking it. The spice amounts are more “recommendations.”
Remove stems and seeds then finely chop green pepper. Combine all ingredients and stir until well blended. You now have the following options:
1. Chill until ready to serve. Use as a dip or cheese ball. You can roll it in more cranberries or walnuts before serving.
2. Use instead of mayo to make the most amazing BLT ever. I recommend apple wood or cherry wood smoked bacon, garden fresh tomatoes, non-iceberg lettuce, and a toasted bagel. Spread cranberry pepper sauce to heart’s content. Enjoy!
Other dip variation:
Cut 2-4 strips of bacon into small pieces. Cook until crisp. Drain well. Toss cranberries, green pepper and spices. Set the block of cream cheese on a serving tray. Spoon the mixture over the cream cheese and serve with veggies and crackers.
