Homemade jam used to intimidate me… not anymore! This is the cheater’s strawberry jam, but nobody will know that you didn’t spend hours making it!
Preheat oven to 400 degrees (F).
Pour frozen strawberries into a baking dish, 9×9 or larger.
Defrost strawberries in the microwave. Stir in sugar and cornstarch. Bake for about 20 minutes. Once the strawberry mixture is nice and bubbly, take it out and blend it in a blender, stand mixer with whisk attachment, or food processor until it all the strawberry pieces are broken up and mushy.
Let it cool, and store it in an airtight container for up to 2 weeks. Yum!
