Great way to use up that excess zucchini in the garden. Great for ice cream topping, mixed drinks, smoothies or any recipe that calls for pineapple!
Mix ingredients in a large saucepan and bring to a boil. Simmer 20 minutes. Fill hot jars with hot mixture and cooking liquid, leaving 1/2-inch headspace. Adjust 2-piece lids and process in a hot water bath (15 minutes for half-pints or pints). Yields 8-10 pints.
