A simple and healthy snack! Naturally fermented carrots have the wonderful flavor of garlic and fresh dill!
Place the smashed garlic cloves, fresh dill, sea salt and carrots into a 1-quart mason jar (or other quart sized container with a lid that fits snugly). Fill to within one inch of the top with filtered water. Place at room temperature for up to four days. Then refrigerate for up to 10 months!

japanbarbie, keep the carrots in the liquid.

It has to be sea salt. Table salt is iodized which will kill the natural {good yeast} that you need to ferment! Hope that helps!

Can you use regular table salt or does it have to be sea salt?

Does anyone know, do I drain the water off after the 4 days and then refrigerate or do I leave them in the water? I think they sound yummy!
