A retro southern twist on a delicious snack of sweet watermelon, salty country ham and a slight touch of balsamic.
Slice the watermelon into approximately 1″ cubes.
Fry the country ham in a skillet over medium high heat until completely cooked and browned around the edges.
Cut the ham to fit the watermelon pieces and skewer onto cocktail picks or toothpicks if you misplaced your pretty ones like I did.
In a sauce pan over medium heat, combine the balsamic vinegar with the sugar and cook until well blended. Then add the watermelon in thinly sliced pieces and cook until the pieces are nearly dissolved; if some pieces left are left undissolved, that is okay. Be careful not to scorch your vinaigrette. That’s it. Easy peasy.
Wanna bite y’all? Come on, don’t be scared of the country ham. It won’t bite … but you should, it’s yummy! Now if you don’t like balsamic vinaigrette, go ahead and eat these little babies plain. I do.
