Description

Easy and flavorful blackberry jam.

Ingredients

  • 6 cups Heaping Blackberries, Clean
  • 1-½ cup Water
  • 2 whole Lemons, Juiced
  • 2 teaspoons Vanilla Extract (or One Whole Vanilla Bean)
  • 4 cups Sugar (more To Preference)
  • 3 Tablespoons Gelatin

Preparation

Combine blackberries with water, lemon juice, and vanilla in a large pot and bring to a boil. Allow to boil for 5 to 10 minutes until berries release their juices.

Cover and place in the refrigerator overnight so that the flavor seeps.

The next day:
At this point you need to determine if you want a chunky or a smoother jam. If you want it less chunky you can process either half or all of the berries in a blender before continuing.

Add sugar to the berry mix and bring to a boil. Allow to boil for about 20 minutes until a candy thermometer reaches the temperature of 102 C (215 F).

Quickly add gelatin and mix, then pour in clean, sanitized jars, leaving 1/4 inch head space. Seal and process in boiling water for 10 minutes.

This looks wonderful! I recently purchesed a TINY little jar of blackberry jam from France (at Wegmans) for about $9.00 and it was WONDERFUL, even my 8 year old son was loving it.

I will definitely try this and let you know how it went!!

I keep getting told that this is the best jelly any one has tasted. I kinda munged up the recipe and used pectin instead, using what the can said to use for the amount of fruit. Turned out absolutely great, good consistency, great flavor.

On taste alone this is a 10.

If you are looking for something different or a “gift” jam, stop looking, this is the one. The blackberries and lemons are perfect together and then it finishes with a hint of vanilla. Amazing!

The only reason this is not getting 5 mitts is the gelatin. For the beginner, such as myself, I am unfamiliar with the finer points of cooking with gelatin other than opening a box of Jell-O and adding water. I added it slowly and stirred very quickly but still got some lumps that I finally had to scoop out. Don’t let this stop you from making this jam. Next time I will add the gelatin even slower and I’m sure I wont have any lumps. Trust me when I say this jam is worth any extra effort.
