A simple, yet delicious preparation for baby red potatoes. Pairs really well with salmon as a side dish.
Wash and slice potatoes, not too thinly. Bring a medium size pot of water to a boil, add potatoes and cook until tender. Remove from heat. Drain water from pan, add olive oil, salt and pepper and mix gently. Layer potatoes on a cookie sheet and bake at 475F for approximately 12 minutes or until golden brown.
