Cold zucchini salad with fresh garlic.
Mince garlic. In a medium bowl, combine the lemon juice, olive oil, and minced garlic. Set aside.
Cut zucchini, tomatoes, and onion into uniform cubes, about a centermeter cube. Add into bowl.
Mince the cilantro. You should remove the stems if they are thick. Add into the bowl.
Toss all together, splashing on the vinegar. Chill in the refrigerator for 20 minutes. Serve.
