Description

Tons of veggies with a fajita and red wine vinegar kick! Everyone will love it. Trust me.

Ingredients

  • 1 bunch Green Onion
  • 1 bunch Fresh Cilantro
  • 3 whole Peppers (1 Red, 1 Green, 1 Yellow)
  • 4 whole Roma Tomatoes
  • 1 can (15 Oz. Can) Sweet Yellow Corn
  • 1 can (15 Oz. Can) White Corn, Shoepeg If You Have It
  • 1 can (15 Oz. Can) Black Beans
  • 1 package (about 1 Oz. Packet) McCormick Fajita Seasoning
  • ½ teaspoons Cumin
  • ½ cups Olive Oil
  • ½ cups Red Wine Vinegar

Preparation

Finely chop green onion and cilantro, add to a large bowl. Dice peppers, de-seeded tomatoes and add to the same bowl. Drain and rinse canned corn and beans and add to the bowl. Add fajita seasoning, cumin, oil and vinegar and stir.

Stick in the fridge for 30 minutes or until cold. Serve cold with blue corn chips, or regular chips.
