These are slightly sweet and have a unique flavour. Even those who aren’t big vegetable eaters won’t realize that they’re eating healthy potatoes with skins and sweet potatoes!
1. Preheat oven to 425F.
2. Combine all ingredients and spread in a single layer in 1-2 large glass baking dishes.
3. Cook until golden brown on the edges (about 45-60 minutes depending on how large/small potatoes are diced), turning over half-way through.
