I love these mashed potatoes! The sauteed onions add a surprising amount of flavour.
1. Dice potatoes and boil until soft.
2. Meanwhile, very finely dice onions. Fry with olive oil and butter over low-medium heat (stirring just occasionally) until they are translucent and turning golden brown, about 15 minutes. Cook longer if sweeter onions are desired.
3. Drain the potatoes and mash. Stir in onions, salt, pepper and milk/cream. Add additional salt, pepper and/or milk/cream if needed.

This was sooo easy to make and delicious. I added garlic into the onion (cuz I cant resist….) and it was great!
