This is one of my family’s favorite summer dishes. We use wonderful veggies from local farmers and our own garden to create this traditional Southern recipe. You can even add some fresh shrimp and call it a meal!
Heat oil in a heavy pot or Dutch oven over medium-high heat, then add onions, garlic and okra. Stir frequently until the vegetables are soft (about 5 minutes). Okra produces a nasty slime while it cooks, don’t be alarmed, it will go away as the dish cooks. Add tomatoes, salt and pepper and a few dashes of Tabasco and stir until most of the okra slime is gone. Reduce heat to low (simmer) and cook about 10-15 minutes until tomatoes are cooked down!

this is so good, been eating it for at least 60yrs. My family uses little Perl Onions. Either way is is great. I have one child that wont eat okra anyway but fried. So at my house she does without.

A favorite of mine! Mom cooked this for us years ago and I continued with her recipe. I use either home canned tomatos or store bought, a can of chicken broth and 2 cups of cooked macaroni. Yummy! Makes me hungry for it and I think I still have a few pints of it that I canned. (less the macaroni of course).
