Description

This is the perfect complement to any seafood or chicken dinner. Those who turn away from Brussels sprouts will be surprised by this simple and delicious take on this versatile veggie.

Ingredients

  • 1 pound Brussels Sprouts
  • 1 Tablespoon Olive Oil
  • 1 clove Garlic, Minced
  • ½ cups Onions, Thinly Sliced
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Crushed Red Pepper Flakes
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Crushed Black Pepper
  • ¼ cups Dry White Wine

Preparation

1. Trim stems from Brussels sprouts and remove any wilted leaves from the exterior, cut into halves.

2. Heat olive oil in a large saute pan over medium high heat. Add garlic and onions, saute for 5-6 minuets, or until garlic is fragrant and the onions soften.

3. Turn heat to medium low. Add brussel spouts, lemon zest, crushed red pepper, salt, and pepper. Saute stirring occasionally 7-8 minutes.

4. Add the white wine, cover, and cook for another 5-10 minutes depending on preferred texture. I like mine slightly firm, so I saute for a remaining 6 minutes.

Just tried this, and it was delicious! I didn’t have many sprouts — no idea the weight in fact — so just guessed at the other ingredient proportions, and it came out fine. The lemon zest and red pepper flakes are terrific together. Am experimenting with new dishes for Christmas and this will likely make it onto the menu.

Even though B/sprouts aren’t our favorite, I’m trying to buy fresh, in season. This recipe rocks! Easy, all ingredients on hand and deeeeelish! Better than roasted – it’s a keeper!
