Picadillo is a classic Tex-Mex dish. It’s made of ground beef, potatoes and spices and it’s delicious. Scoop it up with tortilla chips or fold it into tortillas.
Heat your 10” cast iron skillet over medium heat for a few minutes. Add the canola oil, onion, garlic and ground beef. Saute the mixture until the beef browns, about 5 minutes. Drain off grease if desired. Add the remaining ingredients, except cilantro and sour cream and simmer 25-35 minutes. About halfway through, I usually add another 1/3 cup of water if the mixture looks dry. Make sure the potatoes are cooked through. Sprinkle with cilantro and a dollop of sour cream if desired. Serve with tortilla chips for dipping or fold into tortillas. I sometimes use a crisp red bell pepper as a scoop.

this looks so tasty! kind of reminds me of an Irish nacho recipe.
