As long as your avocados are soft, this recipe takes mere minutes to make and will be eaten even quicker!
Open the avocados by cutting them all the way around lengthwise. Twist the avocado halves in opposite directions to get them to separate. Using a spoon, scoop out the green insides into a bowl. Mash using a fork.
Remove seeds from lemon half. Squeeze juice from the lemon into the mashed avocado. If your lemon was not particularly juicy, you may need another lemon half.
Add salt, pepper, cayenne (if you like a little kick) and feta to the avocado. Only add as much feta as you prefer; I don’t usually measure how much I add, so the 1/2 cup is a guesstimate.
Mix all together, taste and add additional seasonings or feta to your preference. Set out with chips or spread onto soft bread and enjoy!
