Description

Very healthy, quick and yummy side dish. Wonderful way to use those spring garden greens.

Ingredients

  • 6 ounces, weight Swiss Chard
  • 6 ounces, weight Spinach
  • 3 ounces, weight Arugula
  • 1 Tablespoon Olive Oil
  • 3 cloves Garlic, Peeled And Sliced Thinly
  • 1 Tablespoon Lemon Juice
  • Salt And Pepper

Preparation

Remove tough stems and combine all three of the greens. Heat olive oil in a large skillet on medium high heat. Add garlic slices to oil and cook until just slightly brown. Begin adding the greens to the skillet. There will not be enough room for all of the greens at once, but keep stirring and adding greens as they wilt down. Once all greens are added and wilted, stir in the lemon juice. Add salt and freshly ground pepper to taste.

Amounts are approximate. Feel free to adjust amounts to suit your taste/needs. I have all these greens in my garden, but any single or combination of greens may be used.
