Description

A great appetizer or accompaniment for Italian meals.

Ingredients

  • ½ cups Extra Virgin Olive Oil
  • 3 cloves Large Garlic Cloves, Crushed And Minced
  • 24 slices Roasted Red Peppers (See My Recipe), Each Roasted Pepper Cut To Fit The Top Of A Crostini
  • Freshly Ground Black Pepper, To Taste
  • Coarse Kosher Or Sea Salt (to Taste)
  • 24 slices French Bread, 1/2" Slices
  • 24 slices Fresh Mozzarella (1/4" Thick) Or Shredded Mozzarella
  • 24 whole Large Fresh Italian Basil

Preparation

1. In a small mixing bowl, combine the olive oil and minced garlic. Cover and set aside to allow the flavours to merge, about ½ hour.
2. Place roasted peppers on a shallow platter. Pour the olive oil and minced garlic mix over them along with a few grindings of black pepper and a sprinkle of some of the Kosher salt over the peppers. Cover and set aside to marinate for about 1 hour.
3. Meanwhile, place the bread slices on a baking sheet and toast in a pre-heated 350° F oven for about 10 minutes until crisp and golden.
4. To serve, place a slice of mozzarella (or some of the shredded mozzarella), 1 slice of roasted pepper (including some of the garlic), and some chiffonaded basil leaf on each crostini (the slices of toasted French bread) and place on a serving platter.

The ladies loved it! I made half the slices just like the recipe and half with sliced olived instead of pepper. They loved both! I also toasted a second time to melt the cheese a little and then added the rest of the toppings.

Made this for company and it was a hit! I used Parmesan because it was what I had on hand… also topped it with a slice of dry coppa.
