Oh my sweet Lord, these are addictive!! I served them as an appetizer when my oldest daughter had her boyfriend come over, and he ate every one of them himself!!
Heat oil (about 1/2 inch deep) in electric skillet to 375 degrees.
In a shallow dish, beat together the egg and milk. Put the flour in a shallow dish and the crumbs in another. Place the pickle slices on paper towels to dry slightly. Lightly coat each slice with flour; then dip into egg mixture and then coat with crumbs.
Carefully drop each slice into the heated oil and fry until golden brown on each side. Drain well on paper towels. Sprinkle with a little salt.
Serve with ranch dressing on the side.
The amount of pickle slices is an estimate- make A LOT of these!! I just kept going until I ran out of pickles!

I love fried pickles so much – thank you for posting a recipe so that I can make them at home. I know the panko is the perfect breading choice!
