Had this at Cowboy Christmas.
Cut a thin slice off the top of each tomato and then scoop out and discard the inner pulp. Invert tomatoes on a paper towel to drain.
Cook the bacon and crumble it. Then mix all remaining ingredients together well. Pipe the mixture into the tomatoes and refrigerate for several hours prior to serving. You can also add cooked chicken breast if you choose.

These sound too adorable. Do you mix the bacon in with the mayo, etc., or do you reserve it to sprinkle on top before serving?
