If you happen to be lucky enough to have leftover homemade mashed potatoes, these are a great way to serve them twice.
Mix dry ingredients for breading for the potato cakes. Take your leftover homemade mashed potatoes (Ree’s recipe is very close to what I use) and form patties with the potatoes about the size of the palm of your hand. Coat patties with breading on both sides. Heat olive oil and butter in a skillet. Fry cakes till they are brown on both sides. Place on paper towels to drain when done cooking.
